The Producer
The Huila region landscape.
Anselmo is a traditional producer, but he likes to focus on quality. It is very important to him that care is taken at every point in processing to obtain the best result. By continually learning and adopting new techniques he improves the quality of his coffee. He expects his coffee to be recognized for its outstanding characteristics, with floral, tangerine, and honey flavor notes; accompanied by delicate, and consistent body.
The Art of Production
At Finca Paraiso, the processing is very focused and precise. Cherries are harvested manually so that great care can go into selecting only the best coffee for the mill and depulping, followed by fermentation in concrete tanks for forty-eight hours. The coffee is then washed twice with clean water before drying. At the farm they use the traditional parabolic system with raised beds for good airflow and the homogeneous drying of coffee.
The Region
Huila is located in the southwest of the country and the Cordillera Oriental begins here. For many years, agronomy has been the main activity in the region. The coffee has earned recognition thanks to the quality achieved by the smallholders.
The Huila region has a rich ecosystem ideal for agronomy. The Nevado del Huila volcano is located in the department, which is Colombia’s third highest peak. Huila is also home to the source of Magdalena the countries largest river.
